It was an exquisite dinner. This restaurant is one of a kind here on Maui.  One that I would highly recommend for a romantic date, as well as for a special celebration with family and friends (perhaps a milestone wedding anniversary, birthday celebration, or simply “just because”). I am talking about nyloS Restaurant in Paia, Maui, Hawaii.

My friend Michelle and I had a superb fine dining experience at nyloS a few weeks ago. I felt compelled to write a blog post about it in addition to the Instagram reels and YouTube shorts I shared. There are many delightful things to share so I thought this would be a great time to take my blog out of hibernation and share about nyloS.

I must admit, returning to blogging after the hiatus was more challenging than I thought it would be. I planned to publish the blog on the weekend after our dinner but it didn’t happen. Maybe it’s because I wanted my “come back” blog to be perfect.  But there is no such thing as a perfect blog, right? So here is my sharing, a month after our fabulous dinner experience,  in my usual A Maui Blog way

Let me start off by saying that this blog post is not a review. This is more of a storytelling and part informational.. I just really wanted to share with you what a wonderful experience we had, with the hope that you too will experience dining at nyloS someday … hopefully soon.

About NyloS 

Nylos is a family owned restaurant led by Chef Jeremy Solyn and his wife Paulina.  Together, they created a space that feels both welcoming and innovative. They opened NyloS in January 2017 and has been delighting diners for over eight years with a unique fine dining experience. 

They will celebrate their 9th year anniversary this November!  

I found an old video of Chef Jeremy and nyloS on Youtube and I thought it would be fun to share it here. This video was posted 8 years ago. The ambiance of the place has evolved and the quality of service just kept getting better through the years.

 

Chef Jeremy and his wife Paulina host an intimate fine dining 7-9 course tasting menu that’s sure to wow, from Wednesday through Saturday each week.  nyloS recently won the Maui No Ka Oi Aipono Gold Award for Best Chef Table for 2025.

Paulina reached out to me via Instagram to invite me and my husband to experience nyloS.  Of course I was delighted and excited! When I researched about nylos, I saw that they have a solid 5 star rating on Open Table and many other restaurant review sites! 

My husband couldn’t make it on the date I reserved, and so he suggested that I invite my friend Michelle to join me and make it a ladies night out. I was glad he suggested that. Michelle and I often go to many events and restaurants together. It’s always fun spending time with her, and we also have fun creating Instagram Reels together.

It’s wonderful to meet Chef Jeremy and Paulina on our visit and get to know about them and Nylos.

Chef Jeremy, originally from Ohio, moved to Maui in 2007 after refining his culinary skills in cities across the U.S. His wife Paulina grew up in Lahaina. Both Chef Jeremy and Paulina are very welcoming and friendly, and they exude the spirit of Aloha.

nyloS is known for its ever-changing prix-fixe menu that highlights local ingredients and showcases culinary artistry. As I mentioned earlier, nyloS recently won the Maui No Ka Oi Aipono Gold Award for Best Chef Table for 2025.

I truly am impressed that this little family owned fine dining restaurant on Maui survived some of the difficult times in the restaurant and tourism industry, like the Covid pandemic and the Lahaina Fire. (Speaking of the Lahaina Fire, they too have lost their home in the fire). 

Maui’s economy and the tourism industry is still in a difficult situation (still trying to recover), and that is why I am sharing about them. As you know, I love helping Maui Small Businesses and this little blog is my way of helping spread the word about them.

Location and Ambiance

Located in the laid-back town of Paia, Maui, NyloS  features just 14 seats and an open kitchen, creating an intimate chef’s table setting that has earned acclaim from both locals and visitors. 

The exterior atmosphere is not luxurious. It is not in a resort setting with lush landscaping. It is in a small building with some parking in front.

However, as soon as we entered the red door of Nylos, we were transported to a whole new world. We noticed the thoughtful design and the cozy and intimate ambiance. We thought it was perfect for date nights, special celebrations or even just a memorable meal with friends (like what Michelle and I had). 

I love what Klara and Brandon shared about their experience at Nylos: “Step inside their cozy but swanky dining room, sit back and prepare for a multicourse culinary journey for the eyes and taste buds … We felt like we had been transported to a Michelin-starred restaurant in Europe but the hospitality with aloha and local ingredients reminded us we were right here on Maui!

Exquisite Dining, Exquisite Cost

Let me be upfront about the cost. I will describe it as “pricey but priceless.” Our 9-course meal came to $300 per person, and the wine pairing added another $120 for six 2.5-ounce pours.

Some of you might be thinking — that’s expensive! And yes, it is. It’s a splurge.

However, NyloS isn’t just dinner; it’s a true culinary indulgence, where cost meets craft. For food lovers who genuinely appreciate fine dining, the price fades into the background compared to the flavors, presentation, and overall experience. 

 

I like how Brian S of Kula, Maui,  said this in his review on Yelp:

When you book your reservation and review the pricing, this place is expensive. Clearly lot of resources going to your meal and the price reflects that but for a special occasion or for doing something out of the ordinary, it’s worth it. Jeremy and his partner Pauline I’ve done such a great job at this place.”.

 

Yes, the price point is not for everyone. But I still would love to share and recommend because there are many visitors (and even residents) on Maui who can afford this price.  And I would love for them (or you, if you are one of them) to experience this delightful fine dining on Maui.

The Food, The Service, The Experience

The culinary experience Michelle and I had is nothing short of extraordinary. We were treated to a luxurious prix-fixe menu that showcased some of the best of Maui’s local ingredients.  

Each dish was thoughtfully crafted, offering a harmonious blend of flavors that delight the palate. 

From delicate amuse-bouches to the main courses, and desserts, the presentations were as stunning as they are delicious.

For those with special dietary restrictions or requests, they can accommodate. Just let them know ahead of time (at the time of reservation).  My friend Michelle is vegetarian and Chef Jeremy prepared delicious vegetarian counterpart for her. I had a taste of some of the vegetarian variations she had and it was so delicious.

 

Both Michelle and I were full at the end of our dinner experience. Full and satisfied, but not bloated. It is just right.

It lasted about 3 hours but we enjoyed every minute of it. Michelle and I got to know each other more as we enjoyed the conversations in between courses.

The wine pairings complement the dishes perfectly, enhancing the overall dining experience.
